amritsari chole kulcha recipe


Preparation Time: 20 mins.
Cooking Time: 30 mins.
Makes 4 servings


For masala

2 tbsp cumin seeds (jeeru)
2-3 cloves
1″ piece of cinnamon stick
1 black cardamon

Other ingredients

2 tsp chole masala
2 tsp punjabi masala
1/2 tsp kitchen king masala
1/2 tsp amchur powder
1/2 tsp turmeric powder
1 tsp red chili powder
1 1/2 tsp roasted coriander powder
1 tbsp ghee
1 tbsp oil
1/4 tsp asafoetida (hing)
1 tbsp chopped ginger
1 tbsp chopped green chilies
2 tomatoes puree
1/2 cup chole
1/4 cup chana dal
salt to taste
1 tbsp chopped coriander

For chutney

3 tbsp chopped onion
2 tbsp chopped coriander
salt to taste
1/2 tsp red chili powder
2 tbsp imli pulp
3 tbsp water

For chilies

1 tbsp roasted coriander powder
a pinch of salt
1/4 tsp amchur powder
a pinch of rock salt (sanchar)
6-8 green chilies

For kulcha

1/2 cup plain flour (maida)
1/2 cup wheat flour
1/4 tsp baking powder
1/4 tsp soda-bi-carb
1 1/2 tbsp chopped coriander
salt to taste
1 tbsp ghee
2 bread slices
1 tbsp curd

For kulcha stuffing

2 boiled potatoes
1 tbsp chopped coriander
1 tsp chopped ginger
1 tsp green chili powder
1 tsp roasted coriander powder
1/2 tsp amchur powder
1/4 tsp chat masala
a pinch of rock salt (sanchar)
1/2 tsp red chili powder
1/4 tsp salt


1. Soak chole & dal for 8-10 hours in water.
2. Pressure cook for 4-5 whistles with 1 tsp chopped ginger, 1 tsp chopped green chili & a pinch of hing.
3. For making masala, dry roast all the ingredients on a slow flame till black & grind properly.
4. In a bowl, mix 2 tsp prepared masala & all dry seasonings & keep aside.
5. In a heated pan, add ghee-oil, hing, ginger, chilies & saute for 30 seconds.
6. Add tomato puree & saute for 1 minutes.
7. Add prepared masala in it & mix properly.
8. Add boiled chole & dal in it & mix properly.
9. Add 1/2 cup water, salt, coriander & mix properly.
10. Let it cook on a very slow flame for 10-15 minutes.
11. For chutney, mix all the ingredients properly.
12. For chili, mix all dry ingredients.
13. Give a slit to chili & remove seeds from it.
14. Fill in the prepared masala & saute in oil for 2-3 minutes.
15. For kulcha, soak bread slices in water.
16. Mix all the ingredients including bread slices & prepare medium stiff dough with water.
17. Knead with 1 tsp oil, cover & let it rest for 1 hour.
18. For kulcha stuffing, mix all the ingredients well.
19. Knead the dough, & divide it into equal parts.
20. Roll out into roti with hand & fill in the stuffing ball in it.
21. Pack the ball & roll out into a medium thick roti with dry flour.
22. Roast on a heated pan on both the sides until light brown on a medium flame.
23. Spread butter on both the sides of kulcha.
24. Serve hot chole with kulcha, chutney & chilies.
