AUBERGINE ROLLS WITH YOGURT CHEESE

AUBERGINE ROLLS WITH YOGURT CHEESE

Cooking Time: 15 mins.
Makes 3-4 rolls

Ingredients

For aubergine rolls

5 tbsp olive oil
2 tbsp chopped jalapenos & olives
1 tbsp chopped spring onions/leeks
2 tsp chopped garlic
1 tsp oregano
1 tsp paprika
1/4 tsp salt
1 tbsp cheese spread
1 long aubergine slices
6-8 chopped basil leaves
3-4 cherry tomatoes

For Yogurt Cheese

3 tbsp smoked chopped aubergine (shekalu ringan)
4 tbsp curd
2-3 drops lemon juice
salt to taste
1/4 tsp pepper powder (mari)

Method

For aubergine rolls

1. In a heated pan, pour 1 tbsp oil, chopped jalapenos, olives, spring onion , 1 tsp garlic and saute till light brown.
2. Take off from the gas. Transfer in abowl.
3. Add oregano, paprika, salt, cheese spread and mix well.
4. Now in a heated pan, saute aubergine slices with 1 tbsp oil till light brown.
5. Sprinkle little salt on it.Once it is light brown, transfer in a plate.
6. Now on the slices, spread 1 -2 tsp stuffing on one corner & fold the slices and pin it with a toothpick.
7. Now heat 3 tbsp oil, add chopped garlic, basil leaves, cherry tomatoes cut into half, saute till soft.
8. Pour over the subergine rolls.
9. Serve it with yogurt cheese.

For yogurt cheese

1. Mix all the ingredients in a bowl and let it cool.
