DHANSHAK WITH BROWN RICE

Makes 2 serving

Ingredients

For dhanshak

1/4 cup masoor dal
1/4 cup tur dal
1/4 cup chana dal
1/4 cup mung
1 chopped brinjal
1 small chopped onion
1 small chopped potato
1/2 cup chopped pumpkin
1 cup water
3 tbsp oil
1 thinly sliced onion
1 small chopped tomato
salt to taste
1/2 tsp turmeric powder
1 tbsp imli pulp
1 tsp kasoori methi
2 tbsp chopped coriander

For dhanshak masala

1/2 tsp oil
1 tsp whole coriander (akha dhana)
1/2 tsp cumin seeds (jeera)
3 whole dry kashmiri red chilies
2 cardamon (elaichi)
3 cloves (lavang / laung)
10-12 peppercorns (mari)
1″ stick cinnamon (taj)
1/2″ piece ginger (adrakh)
4-5 cloves of garlic

For brown rice

2 tsp sugar
1 tbsp ghee
1 cardamon (elaichi)
2-3 cloves & cinnamon (taj-lavang)
1 thinly sliced onion
2 cups boiled rice

Method

For dhanshak

1. Roast all the ingredients of dhanshak masala & grind into a paste. Add 2-3 tbsp water if required.
2. Soak all dal for 1/2 an hour & pressure cooker all dal and vegetables for 3-4 whistle.
3. In a pan, heat oil, add onion, saute till golden brown.
4. Add tomatoes, masala, all vegetables, dal & mix well & cook for 5 minutes.
5. Add salt, turmeric powder, imli pulp, kasoori methi,coriander & mix well for 2 miutes more.
6. Transfer ina bowl and keep aside.

For brown rice

1. In a heated pan, add sugar to caramalize on a very low flame.
2. Once it melts, 4 tbsp water.
3. In another pan, add ghee, cardamon, cloves-cinnamon, onions & saute well.
4. Add this cooked in the sugar water.
5. Add cooked rice and mix well.
6. Cover the lid & let it cook for 5-7 minutes on a slow flame.
7. Serve hot with dhanshak.
