POTATO NYOKI RECIPE

Cooking Time: 20 mins
Makes 2 servings

Ingredients

For nyoki
2 medium sized boile & mashed potatoes
1/4 cup plain flour (maida)
salt to taste
1/2 tsp baking powder
1 tsp butter

For sauce
1 tbsp olive oil
3 tbsp chopped onions
2 chopped green chilies
2 cloves chopped garlic
1/2 tsp mixed herbs
1 cup blanches & chopped tomatoes
salt to taste
1/2 tsp sugar
1/2 tsp pepper powder
1 tbsp cream
1 tsp chopped fresh basil

Method

1. Mix potatoes, flour, salt, baking powder & butter properly.
2. Grease hands with oil & knead properly.
3. Take dry flour on a rolling pin.
4. Make medium thin & long roll out of the prepared dough.
5. Cut into 1″ pieces & sprinkle dry flour.
6. Give impression using fork.
7. Boil 2 glass water & add 1 tsp oil & 1 tsp salt.
8. Add prepared nyoki in it to boil.
9. Strain the water & take nyoki in a plate.

For sauce
1. Heat the oil in a pan.
2. Saute onions & add chilies & garlic.
3. Add herbs, tomatoes, salt, sugar & pepepr powder.
4. Cook for 2 minutes & add cream and basil.
5. Turn off the gas.
6.  Put the nyoki in a serving plate.
7. Pour prepared sauce over it.
8. Sprinkle cheese & basil & serve hot.
