ROASTED TOMATO & CAPSICUM FONDUE RECIPE

Preparation Time: 10 mins.
Cooking Time: 10 mins.
Makes 4 servings

Ingredients

2 roasted chopped tomatoes
1 roasted chopped red capsicum
1 tbsp butter
1 tbsp oil
1 1/2 tsp chopped garlic
1 chopped onion
salt to taste
1/2 tsp basil powder
1 tsp oregano
1 tsp dried tomato powder
2 tsp red chili powder
3-4 tbsp cooking cream
1 tbsp cornflour slurry
1/4 cup grated cheese

Method

1. Roast tomatoes & capsicum over the flame.
2. Remove the skin & crush to puree.
3. Heat the butter & oil in a pan.
4. Add garlic & saute until golden brown.
5. Add onion & saute until golden brown.
6. Add prepared puree, salt, basil, oregano, red chili & tomato powder.
7. Add cream & mix properly & cook for 5 minutes.
8. Add 1/2 cup water, corn flour slurry & mix properly.
9. Stir continuously for 2 minutes.
10. Take off from the flame.
11. Add cheese & mix properly.
12. Serve hot with cucumber, carrot, nachos, bread sticks etc.
