SCHEZWAN SAUCE RECIPE

Preparation Time: 10 mins.
Cooking Time: 10 mins.
Makes 1 bowl

Ingredients

12-15 whole red dry kashmiri chilies
8-9 garlic cloves
2 tbsp oil
1 chopped onion
2 tbsp garlic-green chili paste
2 tsp chopped celery
salt to taste
1/2 cup vegetable stock
1 big tomato puree
1 tsp sugar
2 tsp corn flour slury

Method

1. Boil chilies & garlic until soft.
2. Drain excess water & grind properly.
3. Add water if required to make smooth paste.
4. Transfer this paste in a bowl.
5. Heat the oil in a pan.
6. Saute onion until transculent.
7. Add garlic-chili paste & celery.
8. Saute for a minute.
9. Add salt, vegetable stock & mix.
10. Add tomato puree, prepared chili-garlic paste.
11. Cook on a slow flame & add sugar.
12. Cook until tomatoes are cooked.
13. Add corn flour slury & mix properly.
14. Cook for 30 seconds & transfer in a bowl.
15. Store in a refrigerator & use as required.
