VEGETABLE & CORN AU GRATIN RECIPE

Ingredients

For sauting vegetable
1 tsp low fat butter / olive oil
2 tsp chopped green chilies
1 1/2 cup bar boiled mix vegetables
1/2 cup bar boiled cauliflower
2 tbsp diced capsicums
salt to taste
1 tsp pepper powder

For sauce
1 tsp low fat butter / olive oil
2 tbsp wheat flour
1 cup low fat milk
2 bay leaves (tejpatta)
salt to taste
1 tsp pepper powder
1/2 tsp chopped green chili
1 tsp sugar (optional)
1 cup cauliflower pulp
250 gms cauliflower

Other ingredients

50 gms grated paneer
3-4 capsicum rings
1 tbsp thinly sliced carrot
1 tbsp ketchup

Method

For sauting vegetables
1. For sauting vegetables, in a heated pan add butter.
2. Add chilies & saute for 30 seconds.
3. Add vegetables, capsicum & saute & cook until crispy.
4. Add salt & pepper & mix properly.

For sauce
1. Boil cauliflower & grind it to a paste
2. In a heated pan, add butter & flour & saute until light golden.
3. Add milk slowly by stiring continuously & breaking lumps.
4. Add bay leaves, salt, pepper, chili, sugar & cauliflower pulp.
5. Cook for 2-3 minutes & remove bay leaves from it.

How to proceed

1. Add the sauce to vegetables & mix properly.
2. Pour this mixture in a greased baking tray.
3. Cover the mixture with paneer.
4. Place capsicum, carrot & sprinkle few drops of ketchup on it.
5. Bake in a pre-heated oven at 150 C for 10 minutes.
6. Serve hot.
