VEGETABLES IN SPINACH SAUCE

VEGETABLES IN SPINACH SAUCE

Preparation Time: 10 mins.
Cooking Time: 15 mins.
Makes 2 servings

Ingredients

1/2 tsp oil
1 diced small yellow capsicum
2 tbsp diced paneer
2 tbsp par boiled cauliflower
2 tbsp bar boiled carrot
1 small chopped onion
2 chopped cloves of garlic
1 chopped green chili
2 1/2 cups of chopped spinach (palak)
salt to taste
1/2 tsp pepper powder

Method

1. In a heated pan, add oil, yellow capsicum & paneer.
2. Saute for 40 seconds & transfer in a bowl.
3. In a same pan add 2-3 drops of oil & saute cauliflower & carrot for 40 seconds.
4. Transfer in a bowl & keep aside.
5. In a same pan, add 1/2 tsp oil, onion, garlic & chili.
6. Saute for 40 seconds & add spinach & mix properly.
7. Cook until spinach is cooked, don’t overcook it.
8. Cool down this mixture & grind in a mixture to make sauce.
9. Take this sauce in a pan.
10. Add 2-3 tbsp water in it & add salt & pepper.
11. Add cooked vegetables & mix properly.
12. Let it cook for 2 minutes to coat vegetables properly.
13. Serve hot.
