VEGETABLES WITH LEMON COUSCOUS RECIPE

Preparation Time: 15 mins.
Cooking Time: 20 mins
Makes 4 servings

Ingredients

For couscous
1/2 cup couscous (broken wheat)
1 tsp lemon rind
salt to taste
1 tsp lemon juice
a pinch of turmeric
1/2 tsp olive oil

Other ingredients
2-3 tbsp olive oil
1 sliced onion
1 tbsp chopped ginger-garlic
1 tbsp chopped capsicum
1 chopped tomato
1 cup par boiled mixed vegetables
2 tbsp chopped coriander & mint
1 tsp sweet chilies
1 tsp red chili powder
2 tsp coriander powder
1/2 tsp curry powder
a pinch of turmeric
salt to taste
2 tbsp boiled kabuli chana
1 cup tomato puree
1 tsp sugar
2 tsp tomato ketchup

Method

For couscous
1. Boil 1 glass of water in a sauce pan.
2. Add all other ingredients.
3. Turn off the gas.
4. Cover & keep for 5 minutes.
5. Stir with fork before serving.

For vegetable
1. Heat the oil in a pan & saute onions.
2. Add ginger-garlic, capsicum & tomatoes.
3. Add vegetables, corinader, mint & all seasonings.
4. Add chana, puree, sugar, 1/4 cup water & ketchup.
5. Cook for 2 minutes & turn off the gas.
6. Serve the vegetable with couscous & mint tea.
