Ingredients:

  • 4 cups fresh strawberries, hulled and chopped
  • 1 1/2 cups granulated sugar
  • 2 tablespoons lemon juice

Instructions:

  1. In a large saucepan, combine the chopped strawberries, sugar, and lemon juice.
  2. Stir the mixture over medium heat until the sugar is dissolved.
  3. Increase the heat to high and bring the mixture to a boil.
  4. Use a potato masher to break down the strawberries and release their juices.
  5. Reduce the heat to medium and continue to cook the mixture, stirring frequently, for about 30-45 minutes or until it thickens and becomes syrupy.
  6. Test the jam's consistency by placing a small amount on a cold plate and letting it cool for a minute. If it's thick and gel-like, it's ready.
  7. Once the jam is cooked to your desired consistency, remove it from the heat and let it cool for a few minutes.
  8. Pour the jam into clean jars or containers and let it cool completely.
  9. Store the jars in the fridge for up to 2 weeks.
