Manchow Soup Recipe

Preparation Time: 20 mins.
Cooking Time: 10 mins.
Makes 2 servings

Ingredients

1 tbsp oil
1/2 tbsp grated ginger
1/2 tbsp grated garlic
1 small chopped green chilli
1 tbsp finely chopped cabbage
1 tbsp grated carrot
1 tbsp finely chopped capsicum
1 tbsp finely chopped tomatoes
1/2 tbsp finely chopped cauliflower/mushrooms
a pinch of aji-no-moto (optional)
2 cups vegetable stock
salt to taste
1 tsp chili sauce
1 tsp tomato sauce
3 tsp soy sauce
1 tbsp dilluted in 1/4 cup water
3-4 crushed mint leaves
1 tsp chopped coriander
1/2 tsp vinegar
1 tbsp chopped spring onions
2 tbsp fried noodles

For vegetable stock

2 cups water
1 tejpatta
1 piece ginger
1-2 cloves chopped garlic
1 tbsp chopped onion
1 tbso chopped carrot
1 tbsp chopped potato

Method

For vegetable stock

1. Take all the ingredients in a sauce pan.
2. Cook/boil for 10-15 mins.
3. Strain the mixture a7 keep aside until needed.

For soup

1. Heat the oil in a sauce pan & bring it to a smoking point.
2. Add ginger, garlic, green chilli & saute for 10 seconds.
3. Add cabbage, carrots, capsicum, tomatoes, cauliflower & aji-no-moto.
4. Stir for 1 minute & add vegetable stock, salt & mix well.
5. Add all other ingredients except vinegar and spring onions & mix well.
6. Cook for 2 minutes & turn off the flame.
7. Add vinegar, spring onions & serve hot with fried noodles.
