Vegetable Stew Recipe
Preparation Time: 10 mins
Cooking Time: 20 mins
Makes 2 servings
2 tbsp oil
a pinch of mustard seeds
1 big cinnamon stick
1 tsp urad dal
2 whole broken red kashmiri red chillies
4-5 curry leaves
1 bowl mixed boiled vegetables (cauliflower, potato, beans,peas, carrot)
salt to taste
1 tsp sugar
1 cup cream of coconut milk
1 tbsp cornflour slurry
1.Heat oil in a pan and add mustard seeds, cloves, cinnamon, peppercorns,
urad dal, chillies and curry leaves.
2. Sauté until light pink and add vegetables and salt.
3. Sauté for 2 mins and add sugar, coconut milk and cornflour slurry.
4. Stir gently and cook for 2-3 minutes or until gravy thickens.
5. Serve the stew hot with appam.
